Basil Pesto

Makes 1 Jar

Ingredients

¼ cup toasted pine nuts | 2 cups fresh basil leaves | 2 garlic cloves, halved | ¾ cup shredded parmesan | 5 tbsp olive oil

Method

  1. Place the pine nuts, basil, garlic and parmesan in the bowl of a food processor and season.
  2. Process until finely chopped.
  3. Gradually add the oil until well combined.
  4. Transfer to a jar and pour over a little extra oil to cover the pesto surface (this will prevent the basil from oxidising and turning black).
