Ingredients 1 cup whole egg mayonnaise 2 large, ripened bananas 1/2 cup caster sugar 2 cups self-raising flour Pinch of salt Method Pre-heat oven to 180 degrees c In a large bowl, mash bananas with a fork Stir in sugar, then add mayonnaise and stir Add in flour and salt, then mix until just combined Pour into paper-lined loaf tin Bake in oven for 50mins Rest until cool, then serve
