Herb & Garlic Crusted Steak

Ingredients
1 garlic clove, finely chopped | 1 tsp. curry powder | 2 tbsp. freshly chopped herbs (rosemary, parsley, chives) | 1 tbsp. fresh Rosemary leaves | 2 Porterhouse steaks
Method
- Mix the first 3 ingredients and season.
- Rub all over steaks.
- In a lightly oiled pan, cook for 3 to 4 minutes
- Turn meat over
- Cook for 3 to 4 minutes
- Set aside
- Cover with foil for 5 minutes
- Slice to serve
Betta Tips: For pan-frying glory
- Preheat the pan to moderately hot
- Lightly glaze with with oil
- Meat should ‘sizzle’ when added to the pan
- Keep the heat moderately high; enough to keep it sizzling without burning
- Cook one side until moisture appears on the upper side, turn and cook other side. Turn once for rare and medium. For well-done, turn a second time once moisture re-appears and reduce temperature until cooked.
