Banana Bread

Serves 8


•2 large, really ripe bananas | ½ cup caster sugar l 1 cup whole-egg mayonnaise | 2 cups self-raising flour


  1. Preheat oven to 180C.
  2. Line a loaf tin with baking paper.
  3. In a bowl, mash the bananas. Stir in sugar. Add mayonnaise, flour and a pinch of sea salt and lightly mix until just combined.
  4. Pour the batter into the tin.
  5. Bake for 50 minutes, or until a skewer inserted into the centre comes out clean.
